While investing in 3D printing could open new markets and generate savings for food manufacturers and retailers, companies must first overcome regulatory and legal hurdles not yet identified. Lewis called the growth potential of 3D printing as "unlimited" while acknowledging the technology is not yet fully developed.
"Developing the technology, however, is only one part of bringing 3D printed food to market – the other part is ensuring the machines, processes and finished products meet FDA safety standards, which may not be advancing as quickly as the technology," said Lewis and Kim.
