Under the Nova system, non-nutritive sweeteners that are minimally processed and naturally derived would be less likely to be classified as ultra-processed, said Claudia Lewis, who leads the food and drug practice at law firm Venable.
“Sweeteners derived from natural sources are often called ‘novel sweeteners’ or ‘plant-derived non-caloric sweeteners,’ and they are typically less processed,” she said, giving examples of stevia, which contains steviol glycosides, monk fruit (luo han guo) extract, and thaumatin.
